Development and nutritional evaluation of red dragon fruit jam sweetened with fructooligosaccharide

چکیده
The study aims to investigate 3 types of red dragon fruit jam with pulp and evaluate the final product's sensorial, microbiological proximal analysis. was selected, sanitized, cut were developed evaluated. Three prepared names T1, T2, T3 increased according fructooligosaccharide. After completion experiment, it found that T2 results better in comparison other jams. As elucidated from analysis, control sample shows less acceptance compared fortified jam.
